- Shelled unsalted pistachios
- Granulated sugar
- Brown sugar
- Kosher salt
- Unsalted butter (preferably melted)

For Apple Spice Batter

- Diced unsalted butter
- Sour cream
- Egg
- Vanilla extract
- Lemon juice (preferably fresh)
- All-purpose flour
- Baking powder
- Baking soda
- Ground cinnamon
- Nutmeg
- Kosher salt
- Apple
Directions for Pistachio Streusel
- First, chop the Pistachios coarsely, if they aren't already.
- Add the flour, pistachios, granulated sugar, brown sugar, kosher salt, and baking powder in a bowl and mix them well.
- Now, drizzle the melted butter into the mixture and squeeze the mixture into pea-sized clumps.
- Once done, you can spread the mixture in a pan and freeze it while you move to make the muffin batter.
Directions for Apple Spice Muffin Batter
- Preheat the oven to 350 degrees and get the muffin cups ready.
- Get the bowl of a stand mixer and gently toss the diced butter and granulated sugar until the butter is coated with the granulated sugar. Once it's done, attach the bowl and paddle to the mixer and beat the butter and sugar for about 5 minutes or until they form a paste and there are no clumps visible.
- In another bowl whisk together eggs, sour cream, vanilla, and lemon juice. Then add it to the butter paste and beat on low spread until they are fully mixed.

- Now, grab the apples, peel, and then grate them. And then fold the grated apple into the batter.
Assemble & Bake

- Remove the streusel from the freezer, loosen them up a little bit, and sprinkle them evenly on top of the muffin batter.
- Bake them in the middle of the oven for about 25 to 30 minutes or until they turn golden brown.
- Once done, let them cool and serve them slightly warm or at room temperature depending on your preference.
